In 2008, Herbert and his wife Alison bought the Fife Arms Hotel in Turriff with the ambition of turning what was an 18th Century staging inn, into a modern and vibrant place where locals, visitors and tourists alike, could relax and enjoy great food, nice drinks and a warm atmosphere while maintaining its traditional character and charm.

Having successfully renovated and developed the business over a number of years, Alison and Herbert decided to expand the property following a growing demand for food and beverage bookings as well as private functions.

With the success of their bar and restaurant renovation driving up their reputation and in turn their business, the key focus was providing additional seating in the restaurant but in a way that enabled the dining area to open up and connect to the outdoor space located to the rear of the hotel, which they planned to landscape to provide a natural and protected private patio area that their clients could sit out in and enjoy in the summer months.

Having seen the growing desire for people to enhance their lifestyles through connecting everyday living spaces seamlessly with the outdoors, Herbert and Alison recognised that by expanding their premises to reflect this lifestyle trend, they could not only continue to embrace the popular cosy and traditional main restaurant but they could offer their guests the option to dine in a lighter more modern space. Herbert and Alison were confident that by doing this, it would not only enhance their overall customer experience but would further grow their business.

Taking budgets, timescales, operational requirements and building consents into account, Virginia worked with Herbert and Alison to design a restaurant Extension that would not only meet the needs of the business and its clients, but would visually blend into the surrounding environment, making it suitable for planning regulation as well as adding significant value to the overall property.

Combining large glass panels and sliding patio doors with cedar lining and roof windows, diners could enjoy their meal in a light, open plan space that feels connected to the outdoors but without being exposed to the unpredictability of the Scottish climate.
To enable Herbert and Alison to continue running their busy restaurant business throughout the build, we erected a false partition and the construction took place without compromising the existing business. Within just four weeks the Extension was built.

The restaurant now accommodates 80-90 covers and can double as a function suite thanks to the internal bi-fold doors which when closed, create two individual dining spaces. The large patio doors which face onto the outdoor patio area open up with ease, bringing the outdoors into the restaurant.

Commenting on the success of the Extension, owner and proprietor Herbert Cox said:

“Our decision to expand has easily increased our food and beverage sales by 25% and is responsible for attracting a significant proportion of new business.
